Thanks for the feedback. I've looked a little futher into the gumstix.
There should be no problem fitting the boards in. I have photos:

It seems that there is a limit on which boards can be fitted together,
consequently there is a restriction on (for example) cf or ethernet - it
might be possible to switch these on and off? Also, it seems that it is
not possible to have sound & the lcd driver :(
Does anyone have more information on the screen used in the Jornada? I
have found information about the LCD driver, but I'm wondering if it's
not just better to use the driver from the gumstix, and just connect
that to the screen?
Also, are details available on the wiring for the keyboard?

My current thinking is that the cf slot would be sacrificed, along with
the pcmcia slot. Although the pcmcia slot could be used for compact flash.
