The Honey Pot idea sounds good. Of course, spammers can combat that by
randomizing the emails they send to users (that defeats their purpose of
direct marketing though).

As long as people who signed up with addresses like
user+ipaq_mail@domain can still write to the list (they would send as
user@domain).
