Your partition layout suggests that the card was formatted using PPC,
which creates a logical partition (part 5) in an extended partition
(part 4). This can be corrected by using RamdiskRescue OR by formatting
the card with a camera, or Linux, before setting everything up.

The root stanza needs to point to the Linux root filesystem.

Have a look at the manpage for tar
$ man tar
which should tell you about the -C option.
eg.
$ tar -jxpf tarball.tar.bz2 -C /mnt/targetDir/
